Ricotta Fritters, Lemon Mascarpone, Berries
Serves 8
Ingredients:
4 cups vegetable oil
¾ cup all-purpose or bread flour
1 tbs. baking powder
Zest of 1 orange
Juice of ½ lemon
1 cup whole milk ricotta cheese
2 large eggs, lightly beaten
1 ½ cup granulated sugar, plus 2 tbs.
1 ½ tps. vanilla extract
2 cups orange juice
¼ cup spiced rum
2 bay leaves
10 black peppercorns
Pinch of salt
1 cinnamon stick
2 star anise
8 oz. blackberries
8 oz. raspberries
8oz. mascarpone cheese, softened
8 oz. white chocolate
1 cup heavy creamInstructions:
Heat oil to 350 degrees.For the Spiced Orange Sauce:In a 4 qt. saucepan, combine orange juice, rum, bay leaves, black peppercorns,
cinnamon stick, and star anise. Cook for 10 minutes at medium heat or until reduced
by half. Strain and allow it to cool.
For the ricotta fritters:

In a bowl, add ricotta cheese, eggs, sugar, orange, lemon juice, and vanilla extract. Mix
until combined. Fold in flour, a pinch of salt, and baking powder. Set aside in the
refrigerator.
For the Mascarpone sauce:
Melt 4 ounces of white chocolate. In a stainless-steel bowl, whisk together heavy cream
and mascarpone cheese. Fold in white chocolate. If it is too thick, add more heavy
cream.
To assemble:
Using a plate, spread mascarpone sauce on base of plate. Toss fritters with spiced
orange sauce and arrange 3 on each plate. Arrange berries around the fritters. Grate
white chocolate over the dessert. Serve!

White Asparagus with Chervil Hollandaise
Serves 6-8Ingredients:
2 bunches white asparagus
1 cup unsalted butter, cubed
3 egg yolks
1 tbs. lemon juice
2 tbs. white wine
1 1/2 tsp. water
3 tbs. chervil, chopped (If can’t find chervil, use parsley)
½ tsp. Kosher salt
¼ tsp. Aleppo pepperInstructions
In a 4-quart pan, add water and bring to a boil. Season with salt. Cut the
woody ends from the asparagus. Peel bottom ends of the asparagus with a
vegetable peeler. Add the asparagus into the boiling water and cook for 3 to 4
minutes or until tender. Remove from water using tongs and add to an ice
bath to stop the cooking. Remove from the ice bath and dry with paper towels.In a 2-quart saucepan, add butter at medium heat. Skim off the milk solids and
pour into a container. Using a blender, add egg yolks, white wine, lemon juice,
salt, and water. Turn on blender at medium-low speed. Drizzle in clarified
butter until the sauce is slightly thickened and emulsified. Season with salt
and Aleppo pepper. Pour mixture into a container. Fold in chervil.
